Finally we can present you our first breakfast recipe on our English page – wohoo! Well, obviously you can eat this berry sauce pancake at any time of the day (and night), but I prefer eating it for breakfast. Incidentally, the good pieces are vegan and hard to beat in terms of speed in the preparation. I guess that’s worth another “wohoo”! 🙂
Berry Sauce Pancakes
Shopping list for pancakes with berry sauce: (2 persons)
For the berry sauce:
- 25 g of sugar
- 10 ml of apple juice
- 160 g berries (here: 60 g fresh blueberries, 100 g frozen raspberries )
- Fresh vanilla
- pomegranate seeds
- optional: dark chocolate sprinkles
For the pancakes:
- 1 bottle of protein pancakes (lentil pancake cinnamon) from Five Mills
- 250 ml of water or 250 ml of milk
- 1 tbsp coconut oil
Required kitchen utensils:
2 coated pans, spatula
Preparation:
- First sprinkle 25 g sugar into a coated pan and caramelise.
- Deglaze with approx. 10 ml apple juice.
- Add berries and bring to a boil.
- Refine with fresh vanilla. I like to use the vanilla mill.
- Heat coconut oil in another pan.
- Meanwhile, add the liquid – either 250 ml of water or any milk – to the bottle with the pancake mix and shake well.
- Simply pour the dough from the bottle in the desired size into the pan.
- Turn after 2-3 minutes.
- Serve the pancakes with berry sauce.
- If you like, garnish with some dark chocolate chips at the end.
