I don’t know how you feel about replacing meat or dairy products through vegan alternatives, but I think its genius! I often hear meat-eaters complain about how stupid it is to replace those products, are the “real ones” always the better ones. Many do not get that vegans do not like the taste of certain products, but rather disagree with the fact to kill an animal, the conditions they need to live in or the sustainable aspect of veganism. As I always loved fresh scrambled eggs, I wanted to create an vegan, but obviously tasty, version of it. Believe me or not, I might even prefer this recipe instead of the “real” scrambled eggs. hence why I want to share it with you!

One of my favorite cakes here in Sweden is probably the so called “Kladdkaka” and means something like sticky cake, because its super soft and luscious. You almost can get it at every Cafe and Fika place, because every Swede just loves this chocolate cake. The good thing: You can easily make it by yourself, doesn’t take long and the best; it doesn’t need a lot of ingredients. And all over those advantages this beauty is vegan.
Vegan Macadamia Pancakes
In my opinion you can never go wrong with pancakes. Whether in the morning or as a lunch, pancakes are on my plate regularly. Unfortunately, these delicious portions are often not very vegan- and figure-friendly, as they often contain a lot of sugar and white flour. But of course I experimented a bit around to show you this nice recipe. It’s vegan and only sweetened with xylitol (What’s that?). In addition, I used my favorite nuts in the world to create this beauty.

What are your first thoughts when you hear Sweden? I usually think of beautiful nature, scandinavian style and lots of coffee. However, swedes usually are not missing out the sweets to their coffee and having their traditional fika. What fika is? Its actually just a really nice word for having coffee with friends, colleagues or family and usually having snacks beside it. One of the famous sweets are Kanelbullar and Chokoladbollar, which are super easy to prepare and are also suitable for a vegan diet! So if you want to be a part of swedish tradition, you should definitely start cooking now!
