Tortellini With Tomato Sauce

Ina is looking for a delicious childhood memory for her #letscooktogehter campaign this month. After our mum didnt really conjure up particularly fancy dishes and it was mostly about rice or pasta combinations, I have reinterpreted one of these classic recipes a little bit. Boring pasta with tomato sauce transformed into delicious tortellini with tomato sauce, Mediterranean herbs and – of course – cheese.

Tortellini With Tomato Sauce

Shopping list for 2 portions:

  • 250 g tortellini (here ricotta and spinach filling) (770 kcal)
  • 50 g ham cubes (68 kcal)
  • 400 g diced tomatoes with basil (108 kcal)
  • 50 g of grated Emmentaler (192 kcal) (we use Emmentaler a lot in German cuisine but feel free to use whichever cheese you prefer)
  • 1 red onion (30 cal)
  • 2 cloves of garlic (8 kcal)
  • Oregano, sage, marjoram, thyme, rosemary or Italian herbal mixture
  • Olive oil
  • Salt
  • Pepper

Total calorie count: approx. 1,176 kcal; one serving is about 588 kcal.

Preparation:

  • Cook tortellini in salted water according to the package instructions.
  • Heat 1 tbsp of olive oil in the pan.
  • Cut the onion and garlic cloves into thin cubes and sauté in the pan.
  • Meat eaters are now also roasting the ham cubes in the pan.
  • Deglaze with the diced tomatoes and salt.
  • Season with oregano, sage, marjoram, thyme, rosemary and black pepper.
  • Drain finished tortellini and add approx. 100 ml of the pasta water to the pan.
  • Let it boil and season again with salt, pepper and the Italian herbs.
  • Fold in ground cheese.
